Ingredients

  • 1 cup 240 ml of fresh or frozen cherries (pitted)
  • 1/2 cup 120 ml of granulated sugar (adjust to taste)
  • 1/2 cup 120 ml of water
  • 1/2 cup 120 ml of club soda or carbonated water
  • Ice cubes
  • Fresh lemon or lime wedges Optional Garnish
  • maraschino cherries Optional Garnish
  • mint leaves Optional Garnish
  • orange slices Optional Garnish
  • lemon twists Optional Garnish
  • strawberry slices Optional Garnish

Instructions

Prepare the Cherry Syrup:

  • In a small saucepan, combine the cherries, sugar, and water.
  • Heat the mixture over medium heat, stirring occasionally, until the sugar has completely dissolved.
  • Once the sugar is dissolved, reduce the heat to low and simmer the mixture for about 10-15 minutes, or until the cherries have softened and the mixture has thickened slightly.

Strain and Cool:

  • Remove the cherry mixture from the heat and let it cool for a few minutes.
  • Pour the mixture through a fine-mesh strainer or cheesecloth into a clean bowl or jar to separate the cherry syrup from the solids. Press down on the solids to extract as much syrup as possible.

Assemble the Cherry Soda:

  • Fill a glass with ice cubes to your liking.
  • Pour 2-3 tablespoons (30-45 ml, adjust to taste) of the cherry syrup into the glass over the ice cubes.
  • Slowly pour 1/2 cup (120 ml) of club soda or carbonated water into the glass, filling it to the top. You can adjust the amount of soda to control the sweetness and strength of your cherry soda.
  • Use a long spoon or a straw to gently stir the cherry syrup and carbonated water together.
