1pound450g pork skin with fat attached (you can also use pork belly skin)
2cups475ml water
1teaspoon5g salt
1/2teaspoon2.5g baking soda (optional, for extra crispiness)
Seasonings of your choicesuch as paprika, cayenne pepper, garlic powder, or barbecue seasoning

Instructions
Prepare the Pork Skin:
Start by obtaining 1 pound (450g) of pork skin with fat attached. You can often find this at your local butcher or grocery store. Make sure it's cleaned and free of any remaining meat.
Blanch the Pork Skin:
In a large pot, bring 2 cups (475ml) of water to a boil. Add the pork skin to the boiling water and let it simmer for about 15 minutes. This will help soften the skin and render some of the fat.
Cool and Dry:
Remove the blanched pork skin from the water and allow it to cool. Pat it dry with paper towels to remove excess moisture.
Cut into Bite-sized Pieces:
Once the pork skin has cooled down, use scissors or a sharp knife to cut it into small, bite-sized pieces. You can make them as large or as small as you prefer.
Season the Pork Bites:
Place the pork skin bites in a bowl and season them generously with your chosen seasonings. You can get creative with your flavorings, adding spices like paprika, cayenne pepper, garlic powder, or any other favorite seasonings. Add 1 teaspoon (5g) of salt to taste. For extra crispiness, you can sprinkle a bit of 1/2 teaspoon (2.5g) of baking soda over the pork bites and mix well.
Heat the Oil:
In a deep, heavy-bottomed pot or deep fryer, heat about 2 inches of oil to 350°F (175°C). You can use vegetable oil or lard for frying.
Fry the Pork Crackling:
Carefully add the seasoned pork skin bites to the hot oil, a few at a time, so as not to overcrowd the pot. Fry them until they puff up and turn golden brown, which should take about 2-3 minutes. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
