4large bell peppers (Capsicums)any color you prefer
1pound450g lean ground beef
1cup240ml cooked rice (white or brown)
1small onionfinely chopped
2clovesgarlicminced
1can14.5 oz / 410g diced tomatoes, drained
1cup240ml beef or vegetable broth
1cup240ml tomato sauce
1teaspoondried oregano
1teaspoondried basil
Salt and pepper to taste
1cup240ml shredded mozzarella cheese (or cheese of your choice)

Instructions
Prepare the Bell Peppers:
Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them well.
Prepare the Filling:
In a skillet, heat a bit of olive oil over medium heat.
Add the chopped onion and cook until it becomes translucent.
Add the minced garlic and cook for another 30 seconds.
Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
Drain any excess fat from the skillet.
Add the diced tomatoes, cooked rice, dried oregano, dried basil, salt, and pepper. Mix well.
Stuff the Peppers:
Stuff each bell pepper with the beef and rice mixture.
Slow Cooker Assembly:
Place the stuffed peppers in the slow cooker.
In a bowl, mix the beef or vegetable broth with the tomato sauce.
Pour the broth and tomato sauce mixture around the stuffed peppers in the slow cooker.
Cook on Low:
