Ingredients

  • 4 large bell peppers (Capsicums) any color you prefer
  • 1 pound 450g lean ground beef
  • 1 cup 240ml cooked rice (white or brown)
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 14.5 oz / 410g diced tomatoes, drained
  • 1 cup 240ml beef or vegetable broth
  • 1 cup 240ml tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup 240ml shredded mozzarella cheese (or cheese of your choice)
  • Chopped fresh parsley for garnish

Instructions

Prepare the Bell Peppers:

  • Cut the tops off the bell peppers and remove the seeds and membranes. Rinse them well.

Prepare the Filling:

  • In a skillet, heat a bit of olive oil over medium heat.
  • Add the chopped onion and cook until it becomes translucent.
  • Add the minced garlic and cook for another 30 seconds.
  • Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
  • Drain any excess fat from the skillet.
  • Add the diced tomatoes, cooked rice, dried oregano, dried basil, salt, and pepper. Mix well.

Stuff the Peppers:

  • Stuff each bell pepper with the beef and rice mixture.

Slow Cooker Assembly:

  • Place the stuffed peppers in the slow cooker.
  • In a bowl, mix the beef or vegetable broth with the tomato sauce.
  • Pour the broth and tomato sauce mixture around the stuffed peppers in the slow cooker.
  • Cook on Low:
  • Cover the slow cooker and cook on the low setting for 6-7 hours or until the bell peppers are tender.

Add Cheese and Serve:

  • About 15-20 minutes before serving, sprinkle the shredded mozzarella cheese on top of each stuffed pepper.
  • Close the slow cooker lid and let the cheese melt.

Serve:

  • Carefully remove the stuffed peppers from the slow cooker.
  • Garnish with chopped fresh parsley.
